Our Product
Cheesecake is sold in the bakery on a first-come-first-serve basis. It is offered in individual slices ($4.50), flights (pick 3 slices for $12), as frozen cheesecake halves, and as frozen whole cheesecakes.
My recipes create a lighter and fluffier cheesecake texture (resembling a rich mousse) as compared to some of the denser versions that traditional techniques and recipes produce. Our cheesecakes are each 9" in diameter, and are made in small batches, baked, packaged, and labeled in the bakery.

My name is Mikaela (Bush) McCorkle, and I am the baker and owner of Cheesecake & Company (formerly known as Bear Claw Cheesecake Company). I began baking cheesecakes in 2016 upon graduating from Ashland University with a degree in Family and Consumer Sciences Education. Right out of college I started teaching middle school Life Skills in Mansfield, OH. My business slowly grew from baking in the evenings after school and selling by-the-slice on the weekends at a local farmer's market.
After moving to Wellington, OH I opened "The Cheesecake Cabin" as a self-serve, cheesecake roadside stand in which I sold cheesecakes for walk-in purchases and order pick-up that I baked in my licensed home-bakery. Operating on the honor system with a drop box for payment, business continued to quickly grow--often selling out of the cheesecake inventory I spent the whole week baking, within an hour of opening on the weekend. After a chaotic couple years of operating at maximum capacity between teaching full-time, coaching, maintaining farm life, and baking at least an additional 40 hours a week, I decided it was time to prioritize "my side business" and give myself the time and opportunity to pursue other interests. The bakery here in Winchester, KY opened June 2022. My hope is that Cheesecake & Company will create opportunities to connect and share genuine conversation with others over a slice of dessert. Whether it's in celebration of a life event, a milestone, or a cup of coffee with a friend, I hope you find time to enjoy the simple things in life with those you care about.
